Our cacao is stoneground before being handmade at Nearynógs in Ireland. It’s the best baking chocolate on the island of Ireland in our personal opinion.
CHOCOLATE TEFF FLAKE cakes
100g salted butter (or 100g coconut oil to make vegan)
150g 70% cacao chocolate
4 tablespoons maple syrup
1 box Teff flakes
60g cacao nibs
Pour water into a saucepan a third of the way up and then bring it to boil.
Once boiled, place the butter/coconut oil and chocolate into a metal bowl, then place it on top of the pot stirring as the mixture melts. Once fully melted, stir in the cacao nibs and teff flakes.
Line a muffin tray with large baking cups. Spoon the chocolate flakes into their cups before putting the tray into the fridge for them to set for a couple of hours.
These easy peasy cakes are high in fibre, phenolics, vitamin c, magnesium, zinc and amino acids. Phenomenal antioxidant feed for your gut health.
Store in a paper bag or a sealed box at room temp for 3 days. Store in the fridge up to 7 days.
