This course is designed to be taken at your own pace, in your own time. Once you have access to the course it is yours for life!

Bread made in a certain way can heal your digestive health issues and eradicate your IBS symptoms.

Whether you suffer with severe gut health issues or you simply yearn for more functionality from the bread that you eat, this course will teach you about the science and the "why" behind the bread that we eat.

Suitable for both beginners and those who've been making bread for a while now but want to make more digestible bread.

This course is a 3 month series of step by step videos and step by step recipes made up of many notes, recipes as well as audio files to ensure you make the best sourdough bread for YOU and your UNIQUE GUT MAKE-UP.

Doctor and Founder of Gilchesters Organics Dr. Andrew Wilkinson does 2 classes with us. One on Soil Health and one on Milling.

Karen, Founder of The Happy Tummy Co. who used bread to get rid of her IBS 10 years ago is your teacher and host. She is available to check in with you twice a week to go through any questions you might have throughout your 3 month journey. And for any deeper concerns Karen can jump on the phone with you at a scheduled time throughout.

During this course we will be using either or both ancient and heritage grains to feed our microbiome its food of choice. Our slow fermented and sprouted sourdoughs are all high in fibre, minerals and vitamins as well as phenolic compounds and prebiotic fibre - essential food in healing digestive and bowel health issues.

Included in this course is a version of Karen's secret recipe that initially got rid of her lifelong IBS. It is known by her students and clients as "the magic poo bread".

Initially you will need the following flours, all organic and stoneground -

Rye Flour, Whole Wheat Flour, White Flour, Emmer Flour, Einkorn Flour and Teff Flour. We get our ancient and heritage grains from Gilchesters Organics in the UK, Oak Forest Mills in Ireland and Lovegrass but you can hopefully get yours from your local mill wherever in the world you are!

We have mills in Ireland, the US, Australia, Denmark, Switzerland and others that we recommend for students in those countries.

During the course Karen will also be recommending more grains and seeds for your gut health to be added to the long list of breads we cover on this course.

What's the shelf-life like on your range?

7 days - 2 weeks kept in the products' wrapping in the fridge. Our products do best kept in a temperature controlled environment as they are alive with enzyme activity. Frozen for up to 3 months, wrapped tight in a freezer bag.

How much should I eat each day?

Two slices of the happy tummy loaf for breakfast every morning. Consistency is key to its benefits. You can eat it again at lunch. Make sure to drink plenty of water alongside this loaf. One scone each day. The rest of the range, as you like.

When can I expect to receive my order?

Within 7 days of ordering. Each product goes through a long soak or fermentation process over a couple to a number of days and is baked fresh to order on one of our bake days Tuesday through to Thursday.

What's the story with subscription?

It really is very important to get a daily dose of our signature products for your longterm health and so many of our customers choose a weekly or monthly subscription whereby they have space in their freezers. This way we deliver your order on the same day each week/month so that your gut gets into a good routine. Subs can be paused or cancelled anytime.

Shipping around Ireland + UK

Once your order is baked, DPD come to collect it. Our Irish customers will usually receive their order the day after bake whilst our UK customers receive their order 2 days later. Our products have naturally long shelf-lives.

Order tracking

Once your order has been shipped, you will begin to receive updates by sms and email. It's important to keep an eye out for these updates. DPD will send you a one hour delivery window the morning of delivery so that you can be in.
