Hydrated with filtered coffee, roasted in Ireland, this kilo loaf has 25g freshly ground coffee beans per loaf. There is also a small amount of organic maple syrup and olive oil going through the hydration stage to help the fermentation process. During the 3 hour stretch and fold phase we add cacao nibs from Togo, Kekeli which are an incredible source of magnesium, iron and fibre from Nearynógs and later some 70% chocolate from Nicaragua melted into bakers chocolate by Nearynógs.

100% wholegrain, this loaf contains organic dark teff flour from Ethiopia, organic regenerative spelt and emmer flour grown and milled by Oak Forest Mills in Kilkenny alongside wholegrain population wheat farmed and milled by Wild Farmed Grain in the UK.

Our hand harvested sea salt comes from the shores of Achill Island.

This loaf is high in prebiotic fibre and phenolic compounds that act as antioxidants in the gut.

It's designed to be eaten alongside our Happy Tummy Loaf, not to replace it. We recommend eating this one for lunch with cheeses, eggs, salad, smoked fish, oils, chocolate spread, whatever you fancy! Variety is the spice of life after all! Also delicious served simply with salted butter or olive oil and sea salt! 

Store in its paper bag away from direct sunlight or heat. To refresh this loaf simply place it under running water for 10-15 seconds and bake it on a wire rack tray in your oven at 200 degrees for 10 minutes.

We bake this loaf on Tuesday, Wednesday and Thursday for delivery Wednesday through to Friday. Collections can be made on any of the bake days.
