At The Happy Tummy Co. healing has always been at the epicentre of everything I do. Sharing with people ways to prevent illness and extend a happier life.

You may already know that The Happy Tummy Co. was inspired by my Mum's battle with cancer. When I was 10 years old I was out in my parents nursery planting another beech sapling when I had the idea that one day I would set up a brand that stood for preventative medicine. I wanted to prevent more women from going through what my Mum Siobhán did and what we as a family went through.

This way of being, this way of eating that I've honed in on over the past decade has changed my life for the better and graciously, others too.

The West Coast of Ireland is a very spiritual place. Achill Island played a part in my Mum's journey and the spiritual healing she engaged with there and throughout her battle with cancer, I believe gave us more time with her. And so the stars have aligned and I am setting up my new home in Co. Mayo and building a new bakery school and bakery there - a place to heal, a place to learn, a place to eat copious loaves of bread and most of all, a place to enjoy ourselves in!

Mayo is known for its seaweed bathing, its surf, the mountain trails, the wild scenery, the pilgrimages, spirituality, the epic fish restaurants, the poetry and music scene and I hope to add to the already special vibes there with bread as medicine.

One day soon I would love to welcome you to the Wild Atlantic Way, but until then, a huge great thank you for your support and encouragement of my journey thus far in trying to make my tiny bit of the world a better place than I found it.

I hope that in many ways this is a new chapter in which we can engage with one another on a deeper level. Making the lives we know and live brim full of happiness.
