Highly addictive, this 24 hour Soaked Teff Pecan Banana Loaf is everything you would want from something on the sweeter side of life.
Designed to stimulate the growth of your good gut bacteria it is potently high in prebiotic fibre. It is also high in protein.
Each loaf is slowly made by hand and soaked for 24 hours before bake to unlock all its nourishment, allowing you to assimilate all the functional nutrients.
Spongy, soft and moist, it is excellent sliced as is or toasted and topped with spreads and sweets and savoury things you fancy.

Shelf Life - 7 days at a cool room temperature. 14 days in the fridge. 3 months frozen. If you don't believe your room temperature to be cool then it is best to keep this loaf in the fridge from the start.
Storage - keep wrapped in its paper and paper bag, not in an airtight container.

This loaf is naturally free from gluten and dairy. We bake them in tins that are used for our gluten free baking but we are not a gluten free bakery.
I've named this loaf after my friend Colm who was the voice of reason, kindness and support in a tough time when I was trying to make this work. Everyone deserves a Colm in their life.
