Toasted Teff Pecan

Teff is super high in insoluble fibre and is an amazing source of prebiotic fibre, both crucial to good gut health. Insoluble fibre helps speed up digestion and makes you poo. Prebiotic fibre feeds your good gut bacteria allowing them to produce more good gut bacteria. Including teff in your morning routine is a very wise decision if you're currently dealing with IBS or trying to improve your overall health.

The Teff Pecan Loaf keeps for 5-7 days wrapped in baking paper so is a gem of a loaf to bake at the weekend to give you enough breakfast for the week! I adore this loaf toasted for breakfast with some crunchy peanut butter spread on top with a couple of boiled eggs and freshly ground black pepper. I also adore it toasted with a nut butter and halloumi, especially if I'm back from a sweaty run and need to replace the electrolytes I might have lost. I find halloumi a great source of salt which is a crucial electrolyte needed in the body for thyroid function.
