The Teff Pecan Loaf keeps for 5-7 days wrapped in baking paper so is a gem of a loaf to bake at the weekend to give you enough breakfast for the week! I adore this loaf toasted for breakfast with some crunchy peanut butter spread on top with a couple of boiled eggs and freshly ground black pepper. I also adore it toasted with a nut butter and halloumi, especially if I'm back from a sweaty run and need to replace the electrolytes I might have lost. I find halloumi a great source of salt which is a crucial electrolyte needed in the body for thyroid function.
